Amalfi,
the famous village on the Amalfi Coast of Italy, is home to the
unique "Sfusato Amalfitano" lemon. Its large size and strong aroma
lend itself to the production of the traditional liqueurs of the
region. La Valle Dei Mullini is the name of the picturesque valley
that Amalfi is built on as well as the liqueurs it produces. The
orchards are planted on the steep slopes of the valley. They are
protected from the wind and benefit from the heat retained by the
valley.
Lemon
Liqueur and Cream of Lemon Liqueur are traditional items that have
been made in the homes of southern Italians for years. The cooperative
of growers work closely to ensure the quality of the lemons used
to produce these liqueurs are of the highest quality. The harvesting
and production of the lemons and the Liqueurs are done completely
by hand. The production of the Lemon Liqueur and the Cream of Lemon
is a simple, yet extensive process. The lemon trees produce the
"Sfusato Amalfitano" lemon twice a year. Once the lemons are harvested,
the lemons are brought into the plant where they are then washed
and peeled by hand. The lemon peels are then placed in a vat with
alcohol and left in contact for twenty-four hours. This is done
to impart the flavor and vibrant color of the lemon peel to the
alcohol. The alcohol is then drawn off of the lemon peels and infused
with sugar and water. The combination is then left to ferment until
it reaches the desired alcohol level. The product is then bottled
and is ready for sale and consumption.
The
distillation process for the Cream of Lemon is similar to the Lemon
Liqueur process described above. The main difference is that cream
is combined with the flavored alcohol, sugar and water. The result
is a delicate liqueur that can be used in a variety of ways.
